This incredibly delicious, super easy Baked Strawberry Donut recipe is packed with fresh strawberries, dipped in strawberry glaze, and so tender and moist they almost melt in your mouth.
Preheat the oven to 350°F. Grease a donut pan with oil or butter; set aside.
In a large bowl, whisk together flour, baking powder, baking soda, and salt; set aside.
In a separate bowl, whisk the egg, sugar, oil, sour cream, and vanilla together until combined.
Add the flour mixture to the egg mixture and stir until just combined. Fold in the chopped fresh strawberries.
Evenly transfer the batter to the donut cavies and fill to about 3/4 full. I find it super easy to use a piping bag (or ziptop baggie with a corner snipped) but a spoon works just fine too.
Bake for 12-15 minutes or until a toothpick inserted into the thickest part of the donut comes out mostly clean. Let the donuts cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
To make the strawberry glaze, add the strawberries to a blender and liquify. Transfer to a small bowl, and add the powdered sugar and lemon zest if using. Whisk together until smooth, adding milk or additional powdered sugar to desired consistency.
When the donuts are cool, turn them upside down and dredge the top in the strawberry glaze. You can spoon the glaze too if you prefer. If you want to add sprinkles, now is the time, or coarse sugar is nice too.
