These baked Strawberry Donuts are almost like tasting sunshine… even when it isn’t sunny.

And donuts? Who among us isn’t tempted when we pass a Krispy Kreme shop when the red logo sign is lit, indicating warm-from-the-oven donuts? Not me!

These baked donuts, though, are healthier… and always warm from the oven!

Strawberry Baked Donuts

love making the family baked donuts! They couldn’t be easier to make and require only a donut pan. There’s no frying and splattering, or extra fat.

Yet they are incredibly yummy — just like a donut should be!

And pink? For me– it’s one of its most pleasing attributes. Obviously, I’m a pink lover!

These Baked Strawberry Donuts are filled with fresh strawberries, chopped small, and topped with a fresh strawberry glaze. Beautiful in pink and perfect for spring and summer.

Perfect for Mother’s Day, bridal showers, baby showers, even, yes, for a casual afternoon tea.

Baked Strawberry Donuts Recipe Ingredients

Here are the simple ingredients you’ll need to make these Strawberry Baked Donuts. The exact measurements are in the recipe card at the bottom of this post.

  • All-purpose flour
  • Baking powder and baking soda
  • Large egg
  • Granulated sugar
  • Vegetable oil
  • Sour Cream
  • Vanilla extract
  • Fresh strawberries: (1/2 cup is all you need)

For the glaze, you’ll need:

  • Fresh strawberries
  • Powdered sugar
  • Milk
  • Lemon zest (not absolutely necessary, but it adds so much!)

Kitchen Equipment Needed

These Strawberry Baked Donuts are honestly, super easy to make. Here’s what you need:

How to Make Strawberry Baked Donuts

Preheat the oven to 350°F. Coat a donut pan with oil or butter; set aside.

Step 1: Whisk the Ingredients

In a large bowl, whisk together flour, baking powder, baking soda, and salt; set aside. In a separate bowl, whisk the egg, sugar, oil, sour cream, and vanilla together until combined.

Add the flour mixture to the egg mixture and stir until just combined. Fold in the chopped fresh strawberries.

Step 2: Transfer Batter to Pan

Evenly transfer the batter to the donut cavies and fill to about 3/4 full.

Tip: I find it super easy to use a piping bag (or ziptop baggie with a corner snipped) but a spoon works just fine too.

Step 3: Bake the Donuts

Bake for 12-15 minutes or until a toothpick inserted into the thickest part of the donut comes out mostly clean. Let the donuts cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Fresh Strawberry Glaze

To make the strawberry glaze, add the strawberries to a blender and liquify. Transfer to a small bowl, and add the powdered sugar and lemon zest if using.

Whisk together until smooth, adding milk or additional powdered sugar to desired consistency.

When the donuts are cool, turn them upside down and dip the top in the strawberry glaze. You can spoon the glaze too if you prefer. If you want to add sprinkles, now is the time, or coarse sugar is nice too.

Baked Strawberry Donuts Questions

How long will baked donuts last?

These donuts are best the day they are made but can be stored in an airtight container at room temperature or in the refrigerator for up to 3 days. Baked donuts will absorb the glaze over time, but will still be delicious!

Can you freeze baked donuts?

Absolutely! Store in an airtight freezer container for up to 2 months. Thaw overnight and enjoy!

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup granulated sugar
  • 1/4 cup oil
  • 1/4 cup sour cream
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh strawberries, diced small

Strawberry Glaze

  • 1 cup powdered sugar
  • 2 fresh strawberries, hulled
  • 1 teaspoon lemon zest

    1. Hi Nicole! That is a great question! I know you can bake them in a standard muffin tin but I’ve not tried them in a mini muffin tin (the size of donut holes). I have fresh strawberries in the refrigerator this morning so I’ll test it out and let you know!

      1. The recipe works great in a mini muffin tin. It made 24 “donut holes” with perhaps batter left for 1 or 2 more. Bake for 10 to 12 minutes and let sit in the muffin tin for a couple of minutes before popping them out.

    Can this recipe be used for cupcakes instead of donuts?

    1. Hi Rita! Thank you for the question. It’s actually a great question! I have not tested this recipe as a cupcake, but I’m going to. It’s a great idea. My first thought it would need to be doubled and baked into a standard 12-cup muffin tin for about 20 to 25 minutes. My strawberry muffin recipe is sweet and delicious, and portioned for a cupcake tin. Here is another strawberry cupcake recipe on another site too. Hope one of them works for you!
