Last week was Cinco de Mayo, Kentucky Derby, and Sunday is or was, depending on when you’re reading this, Mother’s Day.
It’s been a week packed with special occasions and opportunities for great food!
This week we’re keeping it simple, healthy, and delicious with Mexican food that will have everyone excited for dinners this week.
What I’m stocking up on at the market is:
- Cherry tomatoes
- Fresh greens
- Avocados
- Peppers
- Red onion for salads
- Shredded cheese
- Tortillas
I’m also making my homemade 1-minute salsa, and Mexican Refried Bean Dip.
Here’s what we’re cooking this week:
Healthy Mexican Dinners
This week we’re making weeknight dinners inspired by the delicious cuisine of Mexico. Not all recipes are strictly authentic, but some are, but they are incredibly yummy.
And they’re 30 minutes or less in the making.
Monday is a quick and easy skillet dinner made with your choice of ground meat (beef, turkey, or chicken are all great choices). Add all your favorite condiments and greens!
On Tuesday we’re making 20 minute Tinga Tacos I’m already drooling over. Simple and easy.
I can’t let a week like this pass without one of my favorite Instant Pot burrito bowl dinners. And again, I’m adding all the healthy condiments, plus healthy tortilla chips too. This is when that homemade salsa comes in handy.
Thursday’s dinner is a Mexican Fish dinner, made with white fish, and super easy and delicious. Add your favorite grain to round out the meal.
For Friday, we’re celebrating a delicious week with pizza, inspired by Mexican street corn. It’s super simple with ready-made pizza dough you can find in the freezer or refrigerated section of your market. To make it gluten-free, a cauliflower or chickpea crust is delicious!
The treat is an authentic Mexican Cinnamon Cookie called Reganadas.
