September Cozy 30 Minute Dinners Menu

Monday: A creamy pasta tossed with sun-dried tomatoes, fresh spinach, and parmesan. It’s quick to make, comforting, and bursting with flavor. Add a green salad and crusty bread if desired.

Tuesday: Build-your-own bowls with seasoned chicken, rice, beans, and fresh toppings for a fast, customizable dinner.

Wednesday: This simple lentil curry comes together in one pot with warming spices, perfect for a nourishing midweek meal. Serve over rice or your favorite grain. I’m also adding naan and a kale salad.

Thursday: A healthy sheet-pan dinner featuring flaky white fish and roasted vegetables. It’s minimal prep, fresh, and light with maximum flavor.

Friday: A cozy twist on chili with tender chicken, creamy beans, and sweet butternut squash, a fall favorite in our house.

Treat: Tender, spiced coffee cake swirled with apples and topped with a buttery crumb. It’s perfect with a cup of tea or coffee.
