What I Love About This Recipe
This is one of those recipes I make nearly every week, especially when life gets busy and mornings are hectic. These egg bites with a slice of warm Homemade Whole Wheat Bread-it's wholesome, hearty, and always a hit. Here's why else I love them:
- Customizable - You can easily make them your own.
- Simple ingredients - Just eggs, cheese, milk, and bacon.
- Meal prep magic - Make them ahead and enjoy all week.
- Big flavor - That smoky Gouda makes these feel extra special.

Ingredients for Bacon Gouda Egg Bites
Exact measurements are in the recipe card below.
- Cooked bacon, crumbled - You can use fully cooked bacon from the store or cook your own until crisp.
- Large eggs - Lightly beaten.
- Milk - I typically use dairy milk, but your favorite non-dairy milk works too. If you're using almond milk, the sweetened kind tastes great here.
- Shredded cheese - I love the flavor and melt of Gouda, but cheddar, gruyère, or mozzarella are great options too.
- Seasoning - Salt and pepper to taste, and a pinch of red pepper flakes for a little kick.
Flavor Variations & Add-Ins
Once you've made these once, you'll see how easy they are to tweak. Here are some reader-favorite variations:
- Vegetarian - Skip the bacon and add sautéed spinach or mushrooms.
- Cheesy - Try cheddar, Swiss, or pepper jack for different flavor profiles.
- Herby - Add chopped chives, green onions, or fresh basil.
- Savory & Spicy - A dash of smoked paprika or hot sauce goes a long way.
For a lighter, veggie-packed version, try these Healthy Spinach Egg Bites. They're just as easy and great for meal prep.
How to Make Bacon Gouda Egg Bites

Step 1: Lightly spray cups and portion bacon and shredded cheese evenly.

Step 2: Fill each cup with egg mixture, whisk together with the milk and seasoning.

Step 3: Bake until puffed and golden, about 18-20 minutes.

Step 4: Enjoy!
The full step-by-step recipe is in the card below, but here's a quick overview:
- Prep the muffin tin - Lightly grease or line with silicone cups for easy release.
- Mix the eggs - In a large bowl or glass measuring cup, whisk together the eggs, milk, and seasoning.
- Add the bacon - Portion the bacon and Gouda into each cup, and then pour the egg mixture over the top for added texture.
- Bake - Pour the mixture evenly into the muffin tin and bake until puffed and golden.
- Cool slightly - Let the egg bites sit for a few minutes before removing from the pan.
Tip: For a fluffier, more custard-like texture, blend the egg mixture briefly before baking.
Storage & Reheating Tips
- To refrigerate - Store cooled egg bites in an airtight container for up to 4 days.
- To freeze - Let cool completely, then freeze in a single layer before transferring to a freezer-safe bag.
- To reheat - Microwave on 50% power for 60-90 seconds, or warm in a low oven.
Recipe FAQs
Yes! They freeze really well. Just make sure they're fully cooled before freezing.
Absolutely. Gouda is rich and melty, but cheddar, mozzarella, or even feta would be delicious.
You can use small ramekins or silicone molds placed on a baking sheet instead of using a muffin tin. Just watch the bake time, it may vary slightly.
Not at all. These bake up beautifully on their own, though adding a pan of hot water to the oven can create a softer texture if you'd like.
Serving Ideas
We love to serve these egg bites with:
- A bowl of fresh fruit or berries
- Toasted bread (like this whole wheat bread recipe) or a slice of sourdough
- A smoothie or a hot cup of coffee

These are phenomenal! I had Gruyere on hand and used muffin liners to avoid added oil and they are perfect. Sprinkled some chives on them before eating. Thank you!
Hi Lauren! You've made my day! I'm so happy you enjoyed them-- and I'm with you, I love using Gruyere and always fresh chives. Thank you for trying the recipe and letting me know how you enjoyed them.
I really want to try this recipe! Have you tried freezing them? Iโm hoping to make a bunch to have an easy/mess free breakfast for kids before school. Thanks for sharing!
Hi Krisโ I have frozen these! They freeze well and are perfect for quick breakfasts or snacks. I like to thaw in the refrigerator overnight and then gently reheat in the microwave. But sometimes when mornings get hectic, I will defrost in the microwave and then also gently reheat for a few seconds.
