Puff Pastry Strawberry Tart Recipe

This delicious summer treat that takes only minutes to prepare and is a perfect for summer must-make dessert for all the season's gatherings.

Ingredients

  • 1 sheet frozen puff pastry thawed
  • 1 large egg
  • 2 teaspoons water
  • sparkling sugar optional
  • 1 pint strawberries washed/hulled, and sliced into 3-4 slices each
  • 2 tablespoons strawberry jam
  • 1 teaspoon water

Tart

  • 1 cup heavy cream
  • 3 tablespoons granulated sugar

Instructions

  • Preheat oven to 400°F.

Pastry

  • On a parchment lined baking sheet, roll out the puff pastry dough to a large rectangle.
  • In a small bowl, whisk together the egg and the water.
  • Using a sharp knife, score a 3/4-inch border around the edge of the puff pastry sheet. With a fork, dock the inner rectangle of the pastry sheet.
  • Brush the border edges of the pastry with the egg wash. Sprinkle with sparkling sugar if desired.
  • Bake for 20 minutes or until golden brown and puffed. Set aside to cool.

Strawberry Topping

  • In a large bowl, whip the cream to soft peaks, add the granulated sugar and whip until firm but spreadable. Spread the cream over cooled puff pastry.
  • Slice strawberries thinly, about 3-4 slices per berry. Layer berries over the cream topped puff pastry.
  • In a separate bowl, mix the strawberry jam and 1 teaspoon of water to thin. Using a pastry brush, brush the jam mixture over the sliced strawberries.
  • Keep refrigerated until ready to slice and serve. Garnish with additional whipping cream, confectioners sugar, and mint sprigs. Or… ice cream is especially delicious as well!
