With the weekend drawing near and summer cookouts and BBQ’s scheduled, I’m thinking about easy, fresh and delicious desserts. Sound familiar? If so, here is a yummy summer treat that takes only minutes to prepare. Puff Pastry Strawberry Tart is a must make dessert.
The ingredient list is just as simple; frozen puff pastry sheet, a pint of the freshest strawberries you can find, whipping cream and a dusting of sugar.
It’s a light and easy dish to prepare ahead and assemble either on site or when ready to serve.
I love to make fresh whipping cream, because really… nothing else comes close to its flavor and texture. But when needed, Cool Whip is an easy alternative.

To make ahead; prepare the puff pastry sheet by scoring a 3/4-inch border with a sharp knife and docking the center with a fork. The pastry can be made a day in advance and saved for assembly.

Quick and Easy Puff Pastry Strawberry Tart

Ingredients
- 1 sheet frozen puff pastry, thawed
- 1 egg
- 2 teaspoons water
- sparkling sugar (optional)
- 1 pint strawberries, washed/hulled, and sliced into 3-4 slices each
- 2 tablespoons strawberry jam
- 1 teaspoon water
Tart
- 1 cup heavy cream
- 3 tablespoons granulated sugar
Instructions
Preheat oven to 400°F.
Pastry
On a parchment lined baking sheet, roll out the puff pastry dough to a large rectangle.
In a small bowl, whisk together the egg and the water.
Using a sharp knife, score a 3/4-inch border around the edge of the puff pastry sheet. With a fork, dock the inner rectangle of the pastry sheet.
Brush the border edges of the pastry with the egg wash. Sprinkle with sparkling sugar if desired.
Bake for 20 minutes or until golden brown and puffed. Set aside to cool.
Strawberry Topping
In a large bowl, whip the cream to soft peaks, add the granulated sugar and whip until firm. Spread the cream over cooled puff pastry.
Slice strawberries thinly, about 3-4 slices per berry. Layer berries onto of the cream.In a separate bowl, mix together the strawberry slices, 1/4 cup white sugar, and strawberry jam.

Keep refrigerated until ready to slice and serve. Garnish with additional whipping cream, confectioners sugar, and mint sprigs. Or… ice cream is especially delicious as well!
