This week’s healthy weeknight dinner meal plan features fall 30-minute dinners. Delicious flavors of the season, cooked quickly and easily. There’s something for everyone this week!
Fall begins Tuesday. Can you believe it? I’ve anticipated this season for so long that I can scarcly believe it’s officially… here!
I love transitions from one season to the next. Especially when it comes to food.
There are flavors that simply signify a changing of the guard. I love that.
When I think of fall vegetables, yellow squashes come to mind. From pumpkin to butternut, acorns, and even spaghetti squash. Everything is new and fresh once again.
This week begins that transition into soups and warm, heartier foods that capture the season.
I’ll try to include much of these fall-inspired flavors, vegetables, and dishes we love during the season.
From chili to stews, slow-simmer meats, soups, and casseroles. Keeping it healthy and simple is always a top priority.
If there are foods you’d love to see on our weekly menus — please let me know! Several of you have mentioned gluten-free and I do my best to always include a few recipes just for you.

Fall 30 Minute Dinners Week
This week, we’re making an Instant Pot Butternut Squash Soup on Monday that can easily be converted to stovetop if you’d rather. Tuesday and Wednesday we’ll do double-duty with the pork chops, cooking an extra one of two for a simple stir-fry on Wednesday. Ginger Salmon is scheduled for Thursday and Friday is a clean-out-your-refrigerator Korean Meatball Rice Bowl.
And as always, we have a seasonal treat I’m totally looking forward to. A healthier caramel apple! Yay for fall!
This week I’m looking forward to (hopefully) a few long walks among early fall leaves. That is, if our wildfire smokes clears.
I’m beginning our Christmas planning list and have already begun to freeze Christmas cookies.
If the weather cooperates in your neck of the woods, make some warm green tea, take deep cleansing breaths, and get excited for fall. Look for market deals on canned pure pumpkin and all kinds of baking ingredients.

Monday: Instant Pot Butternut Squash Soup
We're getting a jumpstart on fall with this easy Instant Pot Butternut Squash Soup - Made in half the time, it's a quick and easy meatless Monday dish, perfect for fall. I'm serving with a green salad and sliced (hopefully) homemade bread.
Tuesday: Turmeric Pork Chops
It doesn't get quicker than pork chops in a skillet. Let them get a great sear for maximum flavor. And, be sure to cook an extra 1 or 2 pork chops as that will be tomorrow night's dinner. Serve with a green salad and maybe even a boiled egg for extra protein!
Wednesday: Simple Pork Stir Fry
Leftover pork from last night does double duty with these easy, healthy and so delicious simple stir fry. This is a great time to use up any vegetables you have in the produce bin! Serve over steamed rice.
Thursday: Ginger Salmon with Green Beans
A clean eating dinner is on tap for Thursday with this tasty and easy take on salmon. Serve with green beans and a salad.
Korean Meatball Rice Bowls

Caramel Apples
