November 20 Minute Dinners

As November settles in, I find myself craving warm, cozy dinners that still feel doable on busy weeknights. This week's meal plan focuses on fast, flavorful meals-most ready in about 20 minutes-using simple ingredients and real-life shortcuts.

And on Friday, we'll ease into the weekend with one of my favorite "use what you have" dinners: easy enchiladas made with leftover cooked chicken. It’s one of my favorite ways to sneak in veggies (like butternut squash and spinach) or whatever I find in my produce bin!

Menu

Monday: Taco Stuffed Sweet Potatoes
A fun and cozy start to the week. Soft roasted (or microwaved!) sweet potatoes topped with seasoned taco meat and all your favorite toppings - think avocado, salsa, shredded cheese, cilantro. Comforting and bright. (Shortcut: microwave sweet potatoes for a faster dinner.)

Tuesday: Beef and Broccoli Lo Mein
A quick stir-fry that brings everything we love: savory beef, tender broccoli, and a silky noodle sauce. Weeknight-friendly and full of flavor. Serve with chili crisp or toasted sesame seeds for a little extra flourish.

Wednesday: Italian Wedding Soup
Light, cozy, and nourishing. Tender meatballs, greens, and tiny pasta in a flavorful broth-ready fast and deeply satisfying. Serve with warm bread or simple garlic toast for dipping.

Thursday: Maple Glazed Salmon
This beautiful salmon dinner feels special but comes together in no time. A sweet-savory maple glaze, a hot oven, and dinner is served. Add roasted or steamed vegetables on the side-green beans, asparagus, or a simple mixed green salad.

Friday: Easy Chicken Enchiladas
A real-life end-of-week dinner. Use leftover cooked chicken, roll into tortillas, top with sauce and cheese, and bake until bubbly. Cozy, simple, and endlessly customizable. (Tip: Use smaller tortillas for a faster bake.)

Treat: Fall Chex Mix (5 minutes!)
A quick stovetop mix of crunchy cereal, warm spices, and autumn sweetness. Perfect for movie night, packing into lunches, or snacking all week.

Wednesday: Minestra Maritata (Italian Wedding Soup)
We use larger meatballs in our soup to save on prep time. You can buy pre-cooked frozen meatballs to add to your soup or make a homemade batch ahead of time, as we do here. We also use baby spinach, which can be added right to the soup without removing stems or chopping.
