This week we’re leaning on simple, nourishing dinners that come together in 30 minutes or less. This menu is full of cozy, flavorful meals that bridge the season beautifully-warm spices, colorful produce, and comforting skillet favorites-so you can keep weeknights easy while still cooking well at home.

November 30 Minute Dinners

Monday: Sweet Potato Hash. A quick, wholesome skillet dinner loaded with sweet potatoes, peppers, and protein of your choice. Serving ideas: a simple green salad, warm tortillas, or a fried or poached egg on top.

Tuesday: 30-Minute Turkey Chili. A lighter, weeknight-friendly chili that still tastes long-simmered. Serve with cornbread, baked potatoes (I love to top them with chili), or a sprinkle of cheddar and sliced green onions.

Wednesday: Ginger Pork & Broccoli Stir-Fry. Bright, gingery, and savory-this fast skillet stir-fry is packed with tender pork and crisp broccoli. Serve with: steamed rice, noodles, or cauliflower rice, plus lime wedges for brightness.

Thursday: Harvest Salmon Salad. A fresh, seasonal salad with roasted salmon, apples, greens, and a maple vinaigrette. Serve with: warm ciabatta, rosemary focaccia, or whole grain bread.

Friday: Sausage Broccoli Pasta. A cozy weeknight pasta with sweet basil chicken sausage, roasted garlic, and tender broccoli. Serve with: a simple side salad, garlic bread, or roasted tomatoes.

Treat: Maple Pecan Oatmeal Raisin Cookies. Chewy, warmly spiced cookies with maple, pecans, and oats-perfect for fall snacking.
