Ingredients for Sausage Broccoli Pasta
This easy sausage and broccoli pasta is perfect for hectic nights when you want filling, delicious and healthy. Here’s what you need!
- Pasta: Penne pasta works great, but you can use whatever pasta you have on hand.
- Smoked sausage: Use a cooked sausage with lots of flavor. I love Aidell’s Sweet Basil and Roasted Garlic Sausage, but kielbasa, bratwurst, or any other smoked sausage works here.
- Broccoli: Cut into florets
- Onion and Garlic for delicious flavor
- Mushrooms: Button mushrooms or baby bellas work well.
- Baby spinach: I love to grab a bag of prewashed baby spinach for low prep, but you could also use kale or any other green. (including bok choy or Swiss chard).
- Olive Oil, salt, and pepper
- Shredded cheese for serving if desired.
- Red pepper flakes: I like to add a pinch to the finished dish for extra flavor.
How to Make This Pasta Dish
Bring salted water to a boil and cook the pasta according to its package instructions.
While the pasta is cooking, slice the smoked sausage on the diagonal. Then, heat a large skillet with 1 tablespoon olive oil. Add the sausage and cook until it begins to brown. Then add the broccoli, carrot, mushrooms, onion, and garlic. Sautee until the broccoli turns bright green and softens, and the liquid evaporates from the mushrooms. Stir in the spinach and cook until just wilted.
Drain the pasta and add it to the large skillet, turning to coat the pasta and thoroughly combine veggies. Drizzle with more olive oil and season with salt and freshly cracked pepper to taste.
