October Mediterranean Diet Dinners Menu

Monday - Lentil Stew
A hearty vegan classic made with tender lentils, vegetables, and warming spices. Pair it with a loaf of crusty bread or my Mediterranean Chopped Salad for a balanced, plant-forward start to the week.

Tuesday - Mediterranean Skillet Chicken Thighs
Juicy, golden-brown chicken thighs seared in a skillet with herbs and fresh vegetables. Perfect paired with roasted potatoes or a simple green salad.

Wednesday - Chickpea Paella
A vibrant, veggie-filled paella featuring chickpeas, green beans, and peppers. Serve with a drizzle of olive oil and a wedge of lemon-or pair with a small bowl of Marinated Tomatoes for extra Mediterranean flair.

Thursday - Baked Halibut with Brussels Sprouts & Quinoa
Light and nourishing, this sheet pan dinner combines flaky halibut with roasted Brussels sprouts and fluffy quinoa. Add a crisp side salad, such as my easy kale salad with apples, for color and freshness.

Friday - Mediterranean Turkey Skillet
A one-pan dinner of ground turkey, tomatoes, and veggies seasoned with herbs. Serve it over brown rice or alongside warm pita and a dollop of Homemade Tzatziki or 2 minute Greek Yogurt Sauce.

Treat - No Sugar Added Mini Apple Pies
A wholesome fall dessert made with naturally sweet apples and warm spices.
