October 30 Minute Dinners Menu

We’re leaning into October flavors with a week of simple, uncomplicated meals that are ready in no time! Plus, it can’t be the autumn season without making at least one batch of healthy granola you can enjoy for breakfast or snacking all week long.

Monday: Ground Beef Stir Fry

A quick and colorful stir fry made with ground beef, crisp vegetables, and a savory-sweet sauce. It's the perfect way to kick off the week with minimal prep and maximum flavor.

Serving suggestion: Serve over rice or noodles, topped with sesame seeds or green onions. Add a simple cucumber salad for extra crunch.

Tuesday: Chicken and White Bean Soup

This cozy soup is filled with tender chicken, creamy white beans, and fresh vegetables simmered in a flavorful broth. Light yet satisfying, it's a nourishing dinner for cooler nights.

Serving suggestion: Pair with warm, crusty bread or a green side salad for a balanced meal.

Wednesday: Tuscan Chicken with Artichokes

Tender chicken simmers in a skillet with artichokes, sun-dried tomatoes, garlic, and herbs for a rustic Tuscan-inspired meal.

Serving suggestion: Spoon over pasta, rice, or mashed potatoes to catch the sauce, and add a crisp green salad alongside.

Thursday: Maple Glazed Salmon

Salmon fillets brushed with a maple glaze cook quickly while developing a caramelized, slightly smoky flavor. A wholesome dinner that feels a little special and perfect for October.

Serving suggestion: Serve with roasted butternut or your favorite roasted veggies along with fresh greens and a grain like quinoa or rice.

Friday: Turkey Chili

End the week with a bowl of hearty turkey chili-made with lean ground turkey, beans, tomatoes, and warming spices. Cozy, satisfying, and ideal for a Friday night in.

Serving suggestion: Pair with cornbread or crispy potatoes, and top with cheese, sour cream, or cilantro.

Treat: Healthy Granola

Homemade granola, lightly sweetened and packed with oats, nuts, and seeds, makes a healthy snack or breakfast topper. Easy to make and perfect for the weekend.

Serving suggestion: Enjoy with yogurt and fruit, sprinkle on smoothie bowls, or snack by the handful.

Have a delicious week!
