Skillet meals are easy options for weeknights, so I’ve gathered some easy, delicious, and healthy recipes to make the week. From a vegetarian pad Thai to tacos, chicken, Cajun fish and a ground meat skillet that looks simple and perfect for Friday!

Healthy October Skillet Dinners: What’s on the Menu

Monday’s dinner is a vegetarian Asian-inspired classic recipe made easy in a skillet. Perfectly delicious for a meatless Monday. I’m adding seasonal greens to round out the meal.

For Tuesday, we making street tacos with all our favorite condiments. Think healthy veggies, whole grain chips and anything else you love on tacos! I’m substituting ground turkey for the beef as we’ll be having it later in the week.

On Wednesday, we’re making a Mediterranean classic with orzo pasta, deliciously flavored chicken breasts, and lots of veggies.

Thursday’s dinner will take us to Cajun country with a skillet dinner that’s making my mouth water already.

And Friday is a simple ground meat skillet dinner with potatoes that’s calling my name! Serve with crusty bread and lots of greens.
