A 5-day healthy weeknight dinner meal plan featuring Summer One Pot Dinners.
Filled with summer flavors and ingredients, like cucumbers and zucchini, these dinners will be ready in no time. Perfect for more fun time and less clean-up time!
August begins the very heart of summer. The end of the month — concludes with the dog days of summer.
I read this quote that perfectly describes the month:
“The first week of August hangs at the very top of summer, the top of the live-long year, like the highest seat of a Ferris wheel when it pauses in its turning. The weeks that come before are only a climb from balmy spring, and those that follow a drop to the chill of autumn, but the first week of August is motionless, and hot. It is curiously silent, too, with blank white dawns and glaring noons, and sunsets smeared with too much color. Often at night, there is lightning, but it quivers all alone.”
~Natalie Babbitt (author of Tuck Everlasting)
We’re celebrating the first week of August as “the very top of summer” with easy one-pot dinners and simple ingredients.
With the intention of more time embracing summer, spending time with family, and less time cleaning up.
Summer One Pot Dinners
Add a salad with every meal and look for fresh in-season vegetables to round out the meals. Swap recipe ingredients for those easily found in your area.
Don’t forget the summer berries. They make delicious additions to any salad!
Have a great week everyone!

One Pot Summer Dinners: What to Cook (Aug 3)
Monday: Gingery Chicken and Rice With Peanut Sauce
With loose inspiration from Hainanese chicken rice, this weeknight-friendly dish is perfect to start the week. Filled with delicious summer flavors! All made in one pot!
Tuesday: Pantry Pasta
"If you've got a can of tomatoes, a jar of spicy peperoncini, and a hunk of Parm in your fridge, you're halfway to a satisfying pasta dinner." Serve with a fresh green salad.
Wednesday: Chicken with Buttery Orzo
A simple chicken dinner that lacks nothing in flavor but is super easy with bone-in chicken thighs, fennel and orzo. If you can't find fennel in your market, swap it for your favorite green -- even celery.
Thursday: Quick and Easy Fish Chowder
This quick and easy Fish Chowder is a no-recipe recipe. It's delicious, extremely adaptable, light, and creamy. Made with cod, a handful of vegetables, and seasoning.
Friday: Tortellini Salad
"A tomato-rich dressing boosts the flavor and lowers calories and fat in this tortellini salad (the dressing is also great on green salads or grilled fish). Roasted red peppers, artichoke hearts and sun-dried tomatoes add a good dose of vitamins A, C and fiber."
Favorite Zucchini Bread
Zucchini is on everyone's mind these days. I can't let August go by without at least once making my favorite zucchini bread recipe. While I love all of the zucchini bread recipes we have on the site, this one has a special place in my heart.
