Monday: We’re entering the cozy season, and soup is top of mind these days. Monday’s dinner is a delicious and hearty soup filled with healthy plant protein, nutrients, and fall flavors! Add whole grain bread (like this easy one loaf wheat bread recipe) or pitas and a large green salad to round out the meal.
Tuesday: We’re making a Mediterranean Diet-friendly skillet chicken dinner with September-perfect veggies, all made in 20 minutes.
Wednesday: A quick Mediterranean pilaf-inspired one-pot dish with ground turkey (or your favorite ground meat), rice, orzo, sun-dried tomatoes, spinach, and Mediterranean flavors. All in 30 minutes or less!
