We’re cooking September Sheet Pan Dinners all week with early fall flavors, tons of fall-inspired vegetables, and super easy cleanup.
As the leaves begin to ting with expectant glorious color, cravings for warm and fragrant foods surface. This week’s dinner menu takes inspiration from those early fall cravings.
Other than sheet pan dinners, this week’s theme might just be, vegetables. Plan your weekly shopping accordingly. And, as always, substitute your favorite veggies for ones listed in the recipes.
Here’s what we’re cooking for dinner this week:
September Sheet Pan Dinners
We all love sheet pan dinners. They’re simple, easy, and most often require only a few steps. Some of the recipes this week can even be prepped ahead, leaving more time on busy weeknights.
Monday’s dinner is a household favorite, a simple sheet pan fish dinner with vegetables. Use your favorite white fish, I’ve used a Black Cod in the recipe, and add seasonal veggies.
For Tuesday we’re heading south with a healthy sausage sheet pan dinner that’s perfect for meal prep.
On Wednesday we’re bringing fall flavors to the table with a Maple Apricot Chicken that’s utterly delicious.
Thursday’s sheet pan dinner features salmon, Asian-inspired flavors, and, of course, vegetables.
And Friday, we’re making delicious bowl food, cooked on a sheet pan with Friday-perfect flavors.
The treat this week is inspired by Vermont’s red maples that line the hillsides. I’m closing my eyes and dreaming of red while I make these easy bar cookies.

Use your favorite white fish, I'm using Black Cod here, scatter fresh seasonal veggies, and dinners is a simple affair for Monday.
Tuesday: Healthy Sheet Pan Sausage and Veggies
