It’s Summer Skillet Dinners Week as we end the month of July. Simple dinners with big flavors and mid-summer vegetables like zucchini and tomatoes.
We’re cooking summer weeknight dinners that are delicious, healthy, and easy… all week.
Here’s what we’re cooking for dinner in the last week of July.
Summer Skillet Dinners
We’re starting off the week with scrumptious chicken cutlets cooked in a cream sauce. One pan, delicious and easy. And, oh am I looking forward to this one!
On Tuesday, we’re making an always family favorite, equally easy taco skillet made with ground beef or turkey. And don’t forget your favorite condiments too.
Wednesday’s skillet dinner is always a popular choice packed with Italian sausage, zucchini, peppers, and tomatoes. You can serve it over pasta, your favorite grain, or simply as is. I’m adding a salad too.
If you love zucchini, Thursday’s dinner is a quick and easy, low-carb dinner made with zucchini noodles, pesto, and shrimp.
And on Friday, we’re making a super delicious and yet very easy take on paella… Pacific style.
The treat is also made in a skillet and has been a popular favorite this summer, Blueberry Cobbler.

Monday: Chicken Cutlets with Sun-Dried Tomato Cream Sauce

A simple sausage dinner, made super quick and easy in a skillet with Italian sausage, peppers, zucchini, and tomatoes. Serve over a grain, pasta, or as is and add a simple green salad.
Thursday: Zucchini Noodles with Avocado Pesto and Shrimp
