What to Cook: Double Duty Dinners
This week is all about healthy double duty dinners, some meal prep, and stretching leftovers to repurpose into easy weeknight dinners. It’s pantry cooking at its best!
What to Meal Prep:
This is a super easy meal prep weekend assignment.
Meal prep 2 cups of uncooked quinoa and store it in the refrigerator. I love to use red quinoa, but use whatever variety you have on hand.

Rotisserie Chicken:
On Tuesday, we’re roasting a whole chicken. While I’ve included our Instant Pot Rotisserie Chicken recipe, roast it the way you like it best.
Reserve about 3 cups of cooked shredded chicken for use later in the week.
Pantry Ingredients:
As we are several weeks into cooking out of the pantry, it’s important to note that you may not have all of the ingredients listed in the recipes we share. But don’t let that stop you from swapping in what you do have and getting creative.
A reader inspired me with a comment she made on our enchiladas on Thursday. She gave several examples of swapping and switching — and loving the outcome.
Cooking is about creating a new meal, each and every time you make it.

Monday: Quinoa Veggie Burger

Tuesday: Instant Pot Rotisserie Chicken
We're roasting a whole chicken. This is easy in the Instant Pot, but can be roasted in the oven too! "Instant Pot Rotisserie Chicken is a weeknight dinner or Sunday supper dream. Tender, juicy, and incredibly flavorful. Truly, fall-off-the-bone delicious. And the best part? It is incredibly easy to make." Save 3 cups of cooked shredded chicken for tomorrow's dinner and Friday's dinner.
Wednesday: Southwestern Chicken Quinoa Bake with Spinach
This is a quick and easy dinner pulled together with cooked chicken and cooked quinoa. And one favorite double-duty dinners!
Thursday: Maple Glazed Wild King Salmon
This is a super quick dinner pulled together with mostly pantry ingredients. Glazed in a maple sauce, it's scrumptious with very little effort. The recipe does call for balsamic vinegar. If you have a sulfite allergy, swap it for another vinegar. Keep in mind that most vinegar made from grapes will contain sulfites.
Easiest Chicken Enchiladas Ever with Leftover Chicken
I love chicken enchiladas on a Friday night. Especially when they're made with leftover chicken! Use the ingredients you have on hand to stuff the enchiladas with. Make them super easy or take an opportunity to use up any vegetables you have hanging out in the refrigerator!
Treat: Double Chocolate Peanut Butter Skillet Cookie
You've been frugal and healthy all week. Reward yourself with a little decadence!
