After all, who doesn’t love a little chocolate and peanut butter all rolled up into 1 small bite? At 87 calories, it’s a smart choice for a little Omega-3s and protein energy.

Oat Health Benefits

This ancient grain is filled with beta-glucan, an important component of dietary fiber. This active compound is what makes oats a proven source of cholesterol-lowering and anti-diabetic properties.

The National Library of Medicine says that oats are unique among cereal crops as it possesses specific nutrients that continue to show promising value. They said that oats are “an important source of carbohydrates, dietary soluble fiber, balanced protein, lipids, different phenolic compounds, vitamins, and minerals.” 

Ingredients for Peanut Butter Energy Bites

You will find ingredient measurements in the recipe card at the bottom of this post, but here is a quick list of what you will need. I imagine you already have most of the ingredients in your pantry right now!

  • Old fashioned rolled oats, but quick oats will work too.
  • Shredded coconut (I prefer unsweetened coconut)
  • Mini chocolate chips
  • Peanut Butter: I’m using smooth peanut butter, but chunky peanut butter works if that is your preference.
  • Honey: a natural sweetener.

How to Make These Energy Bites

It doesn’t get simpler than this. In a bowl, combine the 5 ingredients: old-fashioned oats, coconut, chocolate chips, peanut butter, and honey. Mix thoroughly and then form into 24 small energy bites. Refrigerate in an airtight container for up to one week. On-demand, healthy snacks with plenty of protein.

Ingredients 

  • 1 ½ cups old-fashioned rolled oats
  • 1/4 cup unsweetened coconut
  • 1/4 cup mini chocolate chips
  • 1/2 cup smooth peanut butter
  • 1/3 cup honey

Instructions

  • Line a baking sheet with parchment paper.
  • Combine all ingredients and mix until incorporated. Using small ice cream scoop, make about 24 small balls. Refrigerate until set — about an hour.
  • Refrigerate in an airtight container for up to a week.
