These festive Christmas Mini Pancake Stacks came about by accident. And sometimes, those accidents are so happily rewarding.
I once made a 3 Ingredient Chocolate Pie… quite by accident. That turned out rather well and is one of my favorite quick and easy pies I now love to make.
Unlike the pie episode, this wasn’t a “kitchen accident,” it was simply a way to fill a spot on a holiday breakfast cheeseboard.
I had the mini pancakes in the freezer, the fruit was washed and ready, the holiday skewers were in the pantry. And within 5 minutes, the bare spots on my holiday board were nicely filled.
And… they became one of my favorite treats on the board.
Cute and delicious enough to stand all on their own, I soon had Christmas morning requests for these very easy breakfast stacks.
What You Need to Make Christmas Mini Pancake Stacks
First of all, let’s talk about the silver dollar pancakes. You can absolutely make your own! But… if you want a 5-minute quick treat, think about buying ready-made.
There are several options in your market. I happened to have De Wafelbakkers Buttermilk Mini Pancakes in the freezer. But I believe Eggos make a frozen mini pancake as well.
If you want to make your own silver dollar size pancakes, a pancake mix works quickly… or here is an easy homemade pancake batter:
Homemade Mini Pancake Batter
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 2 tablespoons baking powder
- Pinch of salt
- 1 large egg
- 1 ¼ cups milk (or to desired consistency)
In a large mixing bowl combine the dry ingredients. Then beat together the egg and milk. Combine the egg mixture with the dry ingredients.
Gently whisk until there are no dry threads of flour. Transfer the batter to a large squeeze bottle.
Heat a nonstick pan, griddle, or skillet over medium-high heat. Squeeze a quarter-sized amount of the batter onto the hot pan. Flip when bubbles rise and the bottom has browned.
Fruit for Christmas Mini Pancake Stacks
You will need 1 strawberry, halved, and 1 thick slice of banana per mini pancake stack.
Spreads and Toppings for Pancake Skewers
I like to add a dollop of spread onto the mini pancakes before topping them with the sliced fruit. To some, I add a smear of peanut butter, and to others a skiff of Nutella.
And to others, I leave plain for those who like it that way.
If serving alone, add a drizzle of warmed maple syrup or a dusting of powdered sugar. When adding these Mini Pancakes Stacks to a Breakfast Charcuterie Board, I do not drizzle maple syrup.
5 Minute Christmas Mini Pancake Stacks

Ingredients
- 16 frozen mini pancakes silver dollar pancakes
- 8 strawberries halved
- 1 to 2 bananas sliced
- peanut butter to taste
- Nutella to taste
- Party Skewers
Instructions
- Place 1 silver dollar pancake on a flat surface. Top with a small dollop of peanut butter or Nutella if desired. Otherwise, leave plain.
- Top the mini pancake with a thick slice of strawberry. Add another mini pancake and top that with a slice of banana and also of strawberry. Run a skewer through the pancake and transfer to a serving platter.
- If desired, drizzle with warm maple syrup or dust with confectioners sugar if desired.
