I’ve been a latecomer to cold brew coffee, I hate to admit. My family, however, will take strong coffee in any shape or form. And in the summer… the colder the better.
While drinking a latte on a rarely hot Seattle summer day, my son’s cold brew, tinkling with ice and beaded moisture, was too enticing to pass up.
I must admit, it was an easy conversion. Switching from hot… to cold on a humid, warm day?
Of course.
But let’s take it up another notch.
Cold Brew Fudgesicles Ingredients
These cold brew fudgesicles combine everything you love about both cold brew coffee and chocolate. And are… a perfect treat. Here’s what you need:
How to Make Cold Brew Fudgesicles.
Here’s how to make these fudgesicles in minutes.
Step 1: Melt the chocolate chips
Melt the chocolate chips in a microwave at 50% power in 30-second increments until the chocolate is melted and smooth when stirred.
Step 2: Thicken the cold brew
Heat the sugar, cornstarch, cocoa, melted chocolate, coffee, and milk in a saucepan over medium heat, stirring constantly until the mixture thickens. Remove from the heat and whisk in the vanilla extract and the butter.
Step 3: Freeze
Let the cold brew chocolate mixture cool slightly (close to room temperature and not hot to the touch); pour into 8 popsicle molds. Freeze for 30 minutes, and then insert sticks. Freeze for an additional 4 to 6 hours.
