While nothing will replace homemade brownies, like my favorite Fudgy Cakey Brownies, sometimes you need a shortcut, a quick fix, an easy recipe with few ingredients. This is that one. And oh my is it good!

If you’re set on completely homemade brownies, you won’t be sorry with the recipe linked above. Simply divide the batter, bake the bottom layer, and spoon the caramel mixture in the middle, followed by the remaining batter and another 20 minutes or so of baking.

But if you’re looking for quick, try this one. Oh my goodness, it’s a chocolate fix cure for sure.

If desired, substitute any chocolate cake mix, although I’m partial to the dark chocolate, like Devil’s Food, or German Chocolate Cake.

Ingredients

  • 1 box box dark chocolate cake mix or Devil’s Food or even German Chocolate Cake mix
  • 1/2 cup melted butter (1 stick)
  • 1 large egg
  • 2/3 cup evaporated milk divided
  • 1 (14-ounce) bag caramels (14-oz)
  • 1 ½ cup chocolate chips

Instructions

  • Preheat the oven to 350°F and prepare a 13×9-inch baking pan with cooking spray.
  • In a large bowl, stir together cake mix, melted butter, beaten egg, and 1/3 cup evaporated milk until well blended. Add half of the batter to the bottom of the prepared pan. Bake for 5-6 minutes.
  • Meanwhile, in a medium saucepan, heat caramels and the remaining 1/3 cup evaporated milk over low heat, stirring constantly until melted and smooth.
  • Remove the brownies from the oven, sprinkle the chocolate chips over the partially baked layer. Then spoon the caramel mixture over the chocolate chips. Finally, drop by spoonfuls the remaining brownie dough batter over the caramel mixture.
  • Bake 25 minutes or until a toothpick inserted 1-inch from the side of the pan comes out clean. The brownies will not be completely set. Cool in the pan on a metal rack for 30 minutes. Then refrigerate for 1 hour before cutting into 24 bars.
