Mediterranean Diet Notes for This Week

The Mediterranean Diet is less about strict rules and more about a way of eating that celebrates whole foods, seasonal produce, healthy fats, and simple, satisfying meals. You'll find plenty of vegetables, legumes, seafood, olive oil, whole grains, and herbs-foods that feel nourishing and deeply satisfying.

If you're new to this style of cooking, you'll find many more ideas and inspiration in our Mediterranean Diet recipe collection, where we share approachable dinners designed for everyday life.

Because this week leads into Valentine's Day, we gave ourselves a little leeway-without straying far from the spirit of Mediterranean cooking. Friday's Marry Me Chicken Soup is a cozy, quietly romantic dinner that feels special without being fussy, and the optional treat lets you celebrate in a way that feels right for you.

Weekly Menu at a Glance

Monday - Curry Lentil Soup:
Serve with warm whole-grain bread or flatbread and a simple green salad dressed with olive oil and lemon.

Tuesday - Broccoli Ginger Pork Stir Fry:

Wednesday - Mediterranean Chicken Orzo Skillet:
Finish with fresh herbs and a squeeze of lemon; serve with a cucumber and tomato salad on the side.

Thursday - Honey Glazed Salmon:
Pair with roasted vegetables or sautéed greens, and serve with farro or couscous.

Friday - Marry Me Chicken Soup:
A perfect Valentine's-adjacent dinner-serve with crusty bread, a simple salad, and a candle or two if the mood strikes.

Treat - Valentine's Day Snack Mix or Mini Strawberry Cheesecakes:
Keep it casual with the snack mix or opt for the mini cheesecakes for a more dessert-forward finish to the week.

I hope you have a delicious, nourishing, and happy week!
