For Tuesday, we’re making dinner super easy with delicious chicken thighs that also happen to be budget-friendly. Add your favorite greens; broccoli, zucchini, green beans, spinach… and dinner is served in a snap.
I’ve been craving Asian takeout lately — so we’re making our own, healthy version with simple ingredients and delicious flavors.
For Thursday, it’s a simple baked cod recipe. I’ll be adding a side salad and couscous with zucchini to the dinner.
Friday is pizza night. This version is a twist on a vegetable chicken pizza. Super easy — and super perfect for Friday.

Healthy 20 Minute Dinners: What to Cook this Week (Dec 6)
Monday: White Bean & Sun-Dried Tomato Gnocchi
"Sun-dried tomatoes are the star of this recipe— providing texture and umami. Combined with spinach, they make this dish a great source of vitamins C and K."
Tuesday: Maple-Thyme Chicken Thighs
"We eat a lot of chicken at our house, and figuring out different ways to serve it gets challenging. My family went nuts for the cozy maple flavors in this recipe, so now I share it at potlucks, too." Serve with your favorite greens.
Wednesday: Instant Pot Ground Beef and Broccoli
Instant Pot Ground Beef and Broccoli is my go-to dinner whenever I’m craving that favorite takeout classic. Made with ground beef, it’s an incredibly easy and delicious adaptation of the original.
Thursday: Baked Cod with Burst Tomatoes & Basil
"Baked Cod with Burst Tomatoes, Basil, Garlic and Lemon- a fast and easy weeknight dinner that is healthy and delicious! Keto and Gluten-free." I'm serving with couscous and zucchini as well.
Friday: Easy Teriyaki Chicken Pizza
A super easy dinner with store-bought pizza dough. Add cooked chicken, broccoli and sauce -- and dinner is delightfully simple and easy for Friday! Add a side salad.
Treat: Peppermint Mocha Chocolate Blossom Cookies
It's Christmas time and there's nothing quite like a Peppermint Mocha to herald in the season. Unless, of course, you're in the mood for cookies. These Peppermint Mocha Chocolate Blossom cookies are like Christmas in every bite. Densely rich with chocolate and espresso, merry and bright with peppermint, and crunchy with sparkling sugar.
