Easy April Dinners
Weekly Dinner Meal Plan: Apr 1 – 5, 2019
April showers bring May flowers — or so they say. Here in my neck of the woods, the spring tree blooms are abundant and gorgeous. And I’m in spring heaven.
With the asparagus, artichokes and bright spring veggies showing up in my market… spring heaven is even sweeter.
This week’s dinner meal plan features those flavors we love all year long, but especially during this gorgeous season. A vegetarian choice for Monday, a slow cooker option for Tuesday, a classic comfort food, healthy of course, for Wednesday, followed by a sheet pan dinner and seafood on Friday.
The treat is incredibly yummy, and perfect for those of you glued to March Madness basketball games. As are we! It seems like it’s game night at our house… every night. Good thing we have more than one tv.
