One pot dinners are a great option for warm-weather meals. Whether that be on one sheet pan, pot, or skillet. It always means easy clean-up and simple serving.
In the summer, it’s a great way to highlight the bounty of the season. With markets brimming with fresh vegetables, every meal can be adapted to what’s in season at the market.
One Pot Dinners
Another option for one pot dinners made easy in the summer is the slow cooker and Instant Pot or pressure cooker.
Here are some recipe ideas using these easy appliances. I especially love the Instant Pot in the summer as it helps keep the kitchen extra cool!

One Pot Summer Dinners
On Monday, we’re having breakfast for dinner — skillet style. It’s a simple, quick-fix dinner, packed with summer produce. Add your favorite July vegetables for Monday’s dinner.
Tuesday’s dinner is a simple, healthy, refreshing seafood dinner that reminds me of southern France. I’m not sure why unless I’m remembering a very similar meal I will never forget on a very hot August evening in Nice. Simple, flavorful food is what I love best about that region.
For Wednesday, it’s a one-pot pasta that is easy to customize with your favorite ingredients. The recipe is written for ground beef, but any ground meat will do (you can even eliminate it if you wish)!
Thursday’s dinner is a one skillet shrimp and brothy beans dinner that seems perfectly suited for a summer evening on the patio.
On Friday, we’re grilling. Which could be done indoors or out, whether that be a BBQ or even a skillet on the stovetop. It’s a chicken dinner packed with charred corn and zucchini! Yum.
The treat is a classic favorite I’m sure you’ve made a time or two.

This easy One Pot Pasta with Ground Beef and Broccoli is for those nights when dinner needs to be quick and easy. As in, almost hands-free. And family-friendly too. I love making this simple all in one pasta dish that is super customizable, is and manages to be light and flavorful with no red sauce or any cream!
Thursday: One-Skillet Shrimp and Cannellini Beans in Tomato-Chile Broth
A brothy beans and shrimp dish perfect for the heart of summer. "Lightly browning the beans and aromatics for a few minutes before you add the tomatoes gives a lot of depth of flavor to the sauce."
Friday: Grilled Chicken Thighs with Charred Corn and Summer Squash
"After a quick turn on the grill, these flame-kissed boneless thighs get tossed with a minty lemon dressing. Corn and zucchini are next up on the grates—and when you platter everything up with the meat on top, the sauce dresses everything."
