Oven Baked Deli Turkey Enchiladas


Need a quick weeknight dinner? Do you have leftover deli sliced turkey or even… leftover Thanksgiving turkey? Oven Baked Deli Turkey Enchiladas make an easy and quick meal, with tons of flavor.

Oven Baked Deli Turkey Enchiladas


1 3/4 pound deli breast of turkey, cubed (or leftovers would be superb)
4 oz can diced green chiles, fire roasted
2 cloves garlic, minced
1/2 cup sliced green onions
1/2 cup lite sour cream
1/2 cup 2% cottage cheese
1 teaspoon chili powder
1 15oz can enchilada sauce
1 cup shredded sharp cheddar cheese
1 cup sliced grape tomatoes
10 Flour tortillas


Combine turkey, chiles, garlic, 1/4 cup green onions, 1/2 cup shredded cheese, sour cream and seasonings; mix well.

Spread ¼ cup turkey mixture on each tortilla; roll up tight.

Pour ½ cup enchilada sauce on bottom of 13″ x 9″ baking dish.

Place tortillas in baking dish, seam side down; top with remaining enchilada sauce, sliced tomatoes, 1/4 cup green onions and 1/2 cup shredded cheese.

Bake oven at 350° F for 20-25 minutes or until thoroughly heated.
