What to Cook (Mar 9-13): 15 Minute Dinners
Because sometimes all you have is 15 minutes, these healthy weeknight 15 Minute Dinners will help get dinner on the table in no time.
The clock is changing on Sunday, March 8. We’re springing forward — which actually just means we lose an hour. And at least for me, it takes me a week to recoup the change.
Although I love the extra hour of daylight at the end of the day.
So this week, we’re making things easy on ourselves with 15-minute dinners.
That isn’t just out of the box mixes or takeout.
They’re actually healthy dinners made in a fraction of the time.
Quick, easy, healthy.
Does it get any better than that?
Plus — I think you’ll agree that these dinners are moving toward fresher, more spring-like eats.
Use the extra time you would have been cooking to do something fun — preferably outdoors with your extra hour of daylight!

Monday: 15 Minute White Bean Soup with Garden Vegetables
Featured in BuzzFeed and other online magazines, this is one of my favorite quick fixes for dinner. It's healthy, hearty and super tasty. I'm serving with a slice of crusty bread.
Tuesday: Easy Chicken Pasta
Another 15-minute favorite, this skillet Chicken Pasta is easy and delicious. The only thing I'm adding to the recipe this week is a bag of baby spinach leaves-- just to boost our vegetable intake.
Wednesday: Chicken with Fresh Basil Pesto
"Typical pesto ingredients--basil, Parmesan cheese, pine nuts, garlic and olive oil--make a tasty and fresh topper for a cooked chicken breast. But in this recipe, no heavy equipment is needed to make the pesto!" Add your favorite steamed veggies to complete this quick and healthy dinner.
Thursday: Korean Beef and Rice
A simple, 15 minute take on a favorite Korean bulgogi recipe. Making it super simple with ground beef (but feel free to swap out another kind of ground meat if desired). I'm serving with steamed broccoli.
Friday: Mediterranean Cod with Roasted Tomatoes
"Oregano, thyme and paprika flavor the cod in this 15-minute, Mediterranean-inspired meal. Olives, capers and roasted cherry tomatoes add color and zest to each bite."
Treat: Creamy Hazelnut Pie
I don't know what's wrong with me -- but I've been craving chocolate this week. Adding hazelnuts is a bonus! In keeping with our 15-minute theme -- this pie made from Nutella is calling my name. Can't wait for it!
