It’s the season of busyness. Let’s keep weeknight dinners simple, healthy, and delicious. These 20 minute dinners are coming to the weeknight rescue.
It’s the second week of December… and time is at a premium.
Between shopping and wrapping, baking and gathering, little time is left for dinner making.
20 minute dinners to the rescue.
On the menu this week we have takeout favorites, like the Chinese Vegetarian Noodle Soup, chili, pasta, a salmon sheet pan dinner, and a Friday Chicken Quesadillas everyone can make their own.
And of course, it’s Christmas. We have to have a treat.
The Pain au Chocolate is one of MY favorites. Seriously. It’s so good and so easy you can’t believe it.

It's the season of busyness. Time to treat ourselves to quick, easy, and healthy 20 minute dinners! From takeout favorites to family favorites. And the treat? Um... absolutely delicious, 15 minutes or less! It's going to be a delicious week!
Monday: Chinese Vegetarian Noodle Soup (中式素汤面)

Fast and Easy Healthy 20-Minute Chili Recipe
This Healthy 20-Minute Chili is perfect for Tuesday. Swap the ground beef if you want, but it's been a while since we had beef -- so I'm keeping it as is. I will add a quick cornbread to serve to keep the guys full, some chips and salsa too.
Wednesday: Easy 20 Minute Turkey Bolognese

Thursday: One Pan Salmon and Veggies

The wonderful thing about quesadillas is how easy they are to customize! Use this recipe as a base and add your favorite veggies -- or what you need to use up in the refrigerator! This is why I always have leftover cooked chicken in the freezer, ready and waiting for a quick dinner!
Easy Petit Pain au Chocolat (Chocolate Croissants)
One of the quickest and easiest -- and in my opinion, absolutely delicious treats you can make are these chocolate-filled croissants. A simple store-bought puff pastry and some good quality chocolate. Oh... yum!
