What to Cook (Jan 20-24): Mediterranean Dinners

We’re sticking with our healthy resolutions and serving Mediterranean dinners all week long. Easy, delicious and quick!

And, of course, we’re not skipping a treat. Yes, even those following a Mediterranean diet can have treats. We’re serving super quick and easy Peanut Butter Banana Greek Yogurt Bowls.

With January in full force, many of us have seen stormy weather. As I write this week’s post, I’m sitting at my keyboard wearing four layers — 4! I’m cold and I don’t dare nudge the heat any higher! I’m thankful for warm hearty meals and Lemon Ginger Tea!

For us… it’s been a snowy, stormy, but incredibly beautiful week. I feel like we’ve finally experienced winter this year!

To keep us healthy, I’m upping our vegetable intake this week and doubling down on healthy dinners.

Mediterranean dinners are refreshingly healthy, colorful and beautiful… and super tasty. It’s what we’re cooking this week!
