Ingredients

  • 1 ½ cups old-fashioned rolled oats
  • ¼ cup unsweetened coconut
  • ¼ cup mini chocolate chips
  • ½ cup smooth peanut butter
  • cup honey

Instructions

  • Line a baking sheet with parchment paper.
  • Combine all ingredients and mix until incorporated. Using small ice cream scoop, make about 24 small balls. Refrigerate until set -- about an hour.
  • Refrigerate in an airtight container for up to a week.
