After a weekend full of indulgence and delicious Easter treats, it’s time to get back on the healthy track.
These dinners are deliciously designed to do just that, without a lot of sacrifices I might add.
Delicious, beautiful dinners, perfect for April… and healthy weeknight dinners.
Here’s the menu:
April Mediterranean Diet Dinners
If you’re like me and are spending the weekend in the kitchen, you may be tempted for takeout. But after a weekend (or week) of indulgence, I’m ready for paired-down, healthy, simple food. Monday’s dinner is just that, a simple pasta dinner full of good-for-you ingredients.
While soup may seem like cold weather fare, for me, soup is always in season. This Tuesday dinner soup is packed with spring vegetables (perfect for Easter leftovers if you have them), and is a simple and hearty dinner. Add whole-grain bread to round out the meal if you wish.
On Wednesday we’re reaching toward summer with a delicious grilled chicken and vegetable dinner with an amazing Mediterranean Spanish-inspired sauce. If it’s still cold, you can absolutely “grill” indoors. Or broil!
For Thursday, we’re making a tuna salad that takes minutes. Literally… minutes. Add whole-grain bread, pita, lettuce wraps, or halved avocados to round out the meal. I’m also baking another batch of my Oat Crackers that I will cut larger rectangles to serve alongside.
Friday’s dinner is an absolute favorite. It’s all about Greek Burgers and Feta Sauce.

This Spring Minestrone Soup is packed with healthy spring vegetables and bright flavors. Perfect for the sometimes still-chilly days of the season. A nourishing, in-season bowl of delicious, flavorful broth, seasonal vegetables, beans, and herbs that's ready in about 30 minutes.
Wednesday: Grilled Chicken with Red Pepper-Pecan Romesco Sauce
"Many variations of the Catalonian roasted tomato sauce, romesco sauce, add roasted red peppers for a little sweetness. Here, we scorch the peppers and tomato on the grill alongside the chicken to keep things simple."
Thursday: Mediterranean Tuna Salad
This Mediterranean tuna salad takes just minutes to put together: it’s a fast and flavorful healthy dinner! Add greens or even whole grain bread to round out the meal.
Friday: Greek-Inspired Burgers with Herb-Feta Sauce
"These healthy burgers get a Mediterranean twist with a yogurt sauce seasoned with oregano, lemon and feta cheese. If you can't find ground lamb, ask the butcher to grind some for you."
Yogurt and Honey Olive Oil Cake
