After last week, it seems tough to think about meal plans, and what we’re cooking for dinner next week.
The nation, deeply divided, facing a health crisis, economic breakdown, and now protests, is in a state of turmoil. And we’re all impacted.
But there is a simple thing we can do to make someone else’s life a tiny bit better, even if for a few minutes.
It’s a gift, really.
We can cook.
We can provide food.
Food they like.
This week, I think it’s appropriate to make comfort food. The list below is some of our favorites. While I’ve attempted to keep it toward the healthy side, the purpose this week is simply to bring comfort and healing… and yes, enjoyment to those we love.
That being said, choose favorite family recipes this week. And if the weather is warm, switch up the way you cook it. Think slow cookers and pressure cookers. Stovetops rather than ovens.
Be creative, heal, and love those around you.

Monday: Ham and Roasted Asparagus Frittata
It's still asparagus season and this quick and simple Roasted Ham and Asparagus Frittata makes me happy. Minutes in the making, delicious and healthy, it's my kind of comfort food. I'm opting for deli ham, if I add it at all, and shredded Italian cheese with a couple of dollops of goat cheese to add that punch of flavor I love. Serving with fresh greens harvest from my patio garden. Switch up the veggies to your liking.
Tuesday: Easy Healthy Taco Salad Recipe with Ground Beef
I'm not sure a recipe is necessary for taco salad, but just in case. Add in your favorite greens, taco seasonings, and veggies. Build it high and build it wide. Ample portions of this favorite salad ever!
Wednesday: Healthy Chicken Pot Pie (Whole 30)
Cozy, healthy chicken pot pie soup made deliciously creamy without any dairy! Instead, cauliflower and potatoes are pureed into the broth to achieve a rich, creamy thickness. This paleo chicken pot pie soup is loaded with veggies like carrots and peas, and is both gluten-free and Whole 30 approved.

Italian chef's know something about creature comforts... and simple, delicious food. It's spaghetti night with the World Best Pasta Sauce. A simple, delicious comfort food. If I have time, I'm making our 1-hour French Bread -- yet again. And salad would be nice too. Followed by a sweet Iced Cold Brew and maybe a chocolate cookie too.
