Is it just me or did summer seem to fly by surprisingly fast this year? Some of my friends say that on most years they want to keep summer as long as possible. But this year, they’re ready to move forward!
I think it’s always a healthy exercise to anticipate rather than lament. And seasons are a rather happy thing to anticipate.
But before my fall-loving friends get too excited, we still have ample summer yet to come. Even so, heading back to school and work does tend to change habits and schedules.

Healthy 20 Minute Dinners: What’s on the Menu
As we shift into a new month and even season, these healthy 20 minute dinners are a great way to ease the transition. Some dinners will take even less time to get a healthy, delicious meal on the table.
On the menu this week are a couple of grain-rich dinners, one with farro one with rice, but substitute your favorite grain for those listed in the recipe.
There are also some shortcuts with store-bought ready made foods like salad kits, which will keep dinners easy.

Monday: Zucchini Noodle Primavera
"This primavera recipe cuts carbs by swapping out the pasta for zucchini "noodles." This quick vegetarian dinner is chock-full of colorful vegetables smothered in a light, creamy sauce. We like using prepackaged spiralized zucchini noodles to keep this recipe ultra-fast, but if you have a spiralizer and zucchini on hand, you can easily make your own."
Tuesday: Easy Fried Rice with Broccoli Cabbage Slaw
An easy to make at home, incredibly delicious fried rice that takes 10 minutes or less. And here's some awesome news-- it requires NO chopping! Simply yummy.
Wednesday: 3-Ingredient Farro Bowl with Rotisserie Chicken
To make this hearty grain bowl, grab a salad kit from the grocery store. Then, top the kit with farro and chicken for a high-protein lunch or dinner that's ready in minutes.
Thursday: Grilled Halibut
"Warm spices including paprika and cumin add wonderful color and flavor to this easy grilled halibut." Add greens and grilled veggies on the side for a healthy mid-week dinner.
Friday: Waffle Iron Turkey Melt Panini
"This playful turkey melt's abundant crisp crevices and gooey interior will have the whole family wondering, 'What can we waffle next?'" Add a giant end of summer salad for a fun Friday dinner.
