With winter’s chill in the air and the shortened days of the season, dinners need to be delicious, simple, and healthy. If we can make grocery shopping easier too, it’s a well-earned bonus.

This week’s dinner menu is all of that — and hopefully, some new favorite recipes discovered along the way too.

Here’s to welcoming a new month, slightly longer days… and healthy eating.

Healthy 4 Ingredient Dinners

For Monday, we’re making a quick and easy stir-fry type dinner that is also meal-prep friendly. With its secret ingredient, the dinner elevates to super delicious!

Celebrating Taco Tuesday with 4 Ingredient Tostadas for a healthy, delicious, family favorite meal. Add greens or other condiments you love! 

I’m already looking forward to Wednesday’s dinner. It’s a classic peanut-style chicken dish, baked on a sheet pan, with 4 ingredients. Add sticky rice and greens if you like to round out the meal.

As a long-time fan of honey mustard, Thursday night’s salmon dinner, also baked on a sheet pan, will be utterly delicious. Add sauteed greens or leafy greens.

Friday night dinner is a simple but restaurant-quality pasta we’re serving with leafy greens and maybe a side of protein for the guys too.

Keeping with our theme of 4 ingredients, the peanut butter cookies couldn’t be simpler to make.
