Why I Love BBQ Chicken Skewers
These chicken skewers are one of my favorite go-to grilling recipes. They’re incredibly simple, fast to make, and full of flavor—no marinating or advance prep needed. Everything can be homemade with pantry staples or simplified with store-bought sauces and rubs. They’re perfect for cookouts, parties, or weeknight dinners.
Key Ingredients
This recipe is flexible and comes together easily with homemade or store-bought ingredients:
- Chicken: Use boneless, skinless chicken breasts or thighs, cut into bite-sized pieces.
- Chicken Rub: A simple mix of paprika, salt, dried thyme, garlic powder, onion powder, red pepper flakes, and black pepper. You can also use your favorite Cajun blend or pre-made BBQ rub.
- BBQ Sauce: A quick homemade sauce with ketchup, honey (or brown sugar), Dijon mustard, Worcestershire sauce, and a bit of the rub. You can also use your favorite bottled BBQ sauce.
How to Make BBQ Chicken Skewers
Before you begin: If using wooden skewers, soak them in water for 30 minutes to prevent burning.
To Prep:
- Mix the Rub: Combine the dry rub ingredients. Set aside 1 teaspoon for the sauce.
- Make the Sauce: In a small saucepan, combine ketchup, honey, mustard, Worcestershire sauce, and the reserved rub. Heat through until warm and slightly thickened.
- Season the Chicken: Toss chicken pieces with the remaining rub and half of the BBQ sauce. Thread onto skewers.

To Grill:
- Preheat the grill to medium-high.
- Grill the skewers, turning every 2–3 minutes, for 8–10 minutes total.
- In the final 2 minutes, brush with BBQ sauce, rotating to caramelize all sides.
Alternate Cooking Methods:
- Bake: 400°F for 20–30 minutes, turning occasionally. Brush with sauce in the final 5 minutes.
- Broil: On a foil-lined pan, broil for 10–15 minutes, turning every 5 minutes. Brush with sauce and broil for another 1–2 minutes.

Easy BBQ Chicken Skewers
Ingredients
- 2 pounds boneless skinless chicken breasts cut into bite-size chunks
Chicken Spice Rub
- 1 ½ teaspoons paprika
- 1 ½ teaspoons salt
- 1 ¼ teaspoons dried thyme
- 1 teaspoons garlic powder
- 1 teaspoon onion powder
- ½ teaspoon red pepper flakes
- ¼ teaspoon ground black pepper
BBQ Sauce
- 1/2 cup ketchup
- 1/4 cup honey (or 1/4 cup packed brown sugar)
- 1 ½ teaspoons dijon mustard
- 1 teaspoon Worcestershire sauce
- reserved chicken spice rub
Instructions
- If using wooden skewers, soak for at least 30 minutes in water before grilling or broiling.
- Mix the Chicken Rub ingredients together in a small bowl. Reserve 1 teaspoon of the rub, this will be added to the BBQ sauce.
- In a small saucepan, combine the ketchup, honey, dijon, Worcestershire sauce, and the reserved dry rub (1 teaspoon). Cook until the sauce is heated through.
- Add cut-up chicken to a large bowl. Sprinkle the spice rub over the chicken and toss to coat evenly, then add 1/2 of the BBQ sauce and toss to coat—thread chicken pieces onto skewers and set aside. The reserved BBQ sauce will be added to the chicken in the last few minutes of grilling.
Grilling
- Set your greased grill or grill pan to medium-high heat. Grill the skewers, rotating every few minutes, until lightly charred and cooked through, about 8 to 10 minutes.
- Brush the chicken with remaining barbecue sauce on all sides and continue to rotate and grill for 1-2 minutes more, or until nicely caramelized.
Alternate Cooking Methods
- Bake at 400℉ for 20-30 minutes, turning frequently, until cooked through. Brush with remaining BBQ sauce during the last minute to caramelize. You can also broil the skewers on a foil-lined baking sheet, turning every 5 minutes, until cooked through, about 10-15 minutes, depending on the thickness of the chicken. Brush the chicken with remaining BBQ sauce and bake or broil 1-2 minutes more to caramelize.
