Quick Summer Skillet Dinners Menu

We’re welcoming summer and making the most out of June’s lingering in-season veggies and fruits with easy dinners to keep this busy week’s meals simple!

  • On Monday, it will feel like Friday when we make a healthy skillet pizza that’s easy to make in a heavy, oven-proof skillet. Add toppings like cooked chicken and veggies, and dinner is done!
  • For Tuesday, we’re making a delicious vegetarian Southwest meal with 5 ingredients and easy substitutions to keep everyone happy!
  • Wednesday’s dinner is a summer favorite Greek chicken meal. In the summer, I like substituting the asparagus for broccoli or broccolini and adding peppers. Serve with couscous.
  • Thursday’s meal features a quick and easy shrimp skillet pasta that’s so simple, you’ll find yourself making it often this season. Serve with a fresh salad.
  • For Friday, it’s all about BBQ and cookouts. It’s the 4th of July– and while I know most of you will have your own traditions, I’ve linked to a post with more than 55 ideas you might want to consider, like Firecracker Chicken Burgers!
