Roasted Salmon for Easy Healthy Summer Dinners: What to Cook (June 21)

Summer officially begins on Sunday, June 20th. We have until Wednesday, September 22nd to relish summer fresh ingredients.

And that seems like an eternity. Oh what a wonder summer is!

We’re celebrating the beginning of summer with these delicious ideas for weeknight dinners.

Healthy Summer Dinners

When I think of healthy summer dinners, salads inevitably come to mind. Salads that are packed with delicious tidbits of fresh seasonal produce. We have two on the menu this week!

Monday is a quinoa salad with fresh seasonal greens, citrus, and chicken. If you want to make it meatless, eliminate the chicken, it’s still delicious!

A classic summer favorite that’s seeing an uptick of interest this season is taco salad. And that is what’s on the menu for Tuesday. 

In my mind, soup is always in season. It’s packed with fresh produce and savory flavors. For Wednesday, we’re making a slow cooker classic soup that will keep your kitchen cool. 

For Thursday, we’re making a sheet pan salmon that cooks in about 12 minutes and is a delicious, 4 ingredient dinner. 

In the interest of keeping the kitchen cool, we’re making a favorite Instant Pot Mexican bowl dish where you can add all your favorite fresh and healthy condiments. 

For the treat — it’s all about fresh and summer. It’s a crisp I have to make at least once before the strawberry season is over.
