Meal Planning in June

Schedules begin to change in June, whether or not you have kids in school! The weather and longer days contribute to meals inevitably changing during this delightful season. While the Mediterranean Diet is a lifestyle that works all year, it’s especially delicious in the summer months with fresh produce and light flavors.

I began serving first my husband and then a growing family Mediterranean Diet-inspired meals years ago. While there were and are treats, splurges, holidays, and reasons to deviate, I love to keep weeknight, everyday meals as healthy as possible.

June Mediterranean Diet Dinners Menu

Monday: A quick vegetarian risotto. If you’re wondering if risotto can be considered part of the Mediterranean Diet, the quick answer is yes, it can. It is a grain dish that aligns with the dietary guidelines, especially when incorporating vegetables, olive oil, and other Mediterranean ingredients. To bulk up the meal, you can add a lean protein like fish or chicken if desired.

Tuesday: A go-to recipe that’s perfectly suited to weeknight dinners. It’s made with ground turkey, a rice and orzo mix, sun-dried tomatoes (which you can also swap for fresh if desired), and Mediterranean flavors. It’s made in one skillet with easy cleanup in mind.

Wednesday: A fun flatbread (made in 5 minutes with no rising) that’s family-friendly, delicious, and easy to swap in your favorite ingredients. Homemade hummus would be great with these! To bulk up the meal, mix a can of chickpeas into the salad.

Thursday: This is a summer favorite that requires little cooking or meal prep. It’s flavorful, light, and perfect for the season! Serve with whole-grain pita for a nice change (or leftover flatbread from last night’s meal!).

Friday: Another one-skillet meal featuring lemon chicken, broccoli, and greens. Serve with a big salad and lots of sunshine (hopefully!).

The Treat is a 2-minute Greek yogurt dessert that’s naturally sweetened and delicious!
