June Mediterranean Dinners Menu
Monday’s dinner will make you know that summer has arrived. A quick and healthy skillet dish with bruschetta flavors is a delicious meal to begin a new summer week. Add a green salad and veggies on the side, like Neapolitan Green Beans with Garlic and Red Pepper.
Tuesday’s dinner is a satisfying and filling whole-grain pasta salad. It’s delicious and ready in about 30 minutes. And the best part? Leftovers! They make delicious lunches throughout the week. If you want, you can add protein on the side, and if you’re serving a smaller group, you may want to cut the recipe in half.
Wednesday’s dinner is a Mediterranean classic with a twist. Simple, delicious, and filled with flavor. Add a summer salad to this one-skillet meal.
Thursday’s dinner is a Mediterranean-flavored seafood meal with roasted tomatoes. It’s another skillet meal that’s ready in no time. I’m adding a big salad, and if there are any leftovers from Tuesday’s dinner (farro salad), I’ll add that too!
Friday’s dinner is all about Lebanese street food. It’s quick, easy, and a fun summer party food. Add your favorite condiments, like tzatziki or 2 Minute Greek Dill Yogurt Sauce! Whole-grain pitas are always welcome.

This Farro Salad combines chewy farro and orzo pasta with Mediterranean ingredients like cucumbers, tomatoes, lemon, feta, and mint. It’s a filling and satisfying dish that makes leftovers for lunches throughout the week. Add protein on the side if needed, and if serving a smaller number, you may want to half the recipe. About 30 minutes.
Shakshuka Recipe with Cannellini Beans
"In this twist on classic Shakshuka, a can of cannellini beans simmers in the spicy tomato and bell pepper sauce until the beans are tender, creamy, and flavorful."
Thursday: Herby Cod with Roasted Tomatoes
