This week we’re cooking delicious healthy, comfort food dinners perfect for early summer. All are packed with flavor and are ready in 30 minutes or less. From southern classics made healthy to Mediterranean skillet dishes and an easy Thai food meal to make at home.

When we think of comfort food, we often think about chilly days, warming foods, and crackling fires. (Well, at least I do!) But comfort food can be a seasonal experience too.
Comfort food, to me, is often about time and place. About remembering tastes and moments and people. And giving life to those moments, memories, and people as we make them once again.
This week’s menu is about hearty food that’s easy to prepare, has abundant flavor… and summer meanings.
June Healthy Comfort Food Dinners Menu
Monday’s dinner is inspired by Juneteenth recipes that are healthy, flavorful, and easy to make. Often foods served on this historic day are red foods, believed to commemorate Black Americans’ lives and hard-won freedom. Monday’s dinner is a healthier, delicious southern classic I’m drooling over, and to round it out, we’re making a batch of Al Roker’s Skillet Cornbread.
If you’re serving a dessert, consider red foods (like anything strawberry) or a traditional Red Velvet Bundt Cake.
Tuesday’s dinner is a seafood sheet pan dinner ready in 20 minutes. And everything, including the rice, is cooked in one pan! Add a large summer salad.
Wednesday’s dinner takes us to the Mediterranean with a simple Greek Chicken skillet dish ready in 30 minutes or less. Again, add a salad and maybe a warmed pita too.
Thursday’s dinner reminds me of a seafood ratatouille. I’m in love with the colors of this dish and how easy it is to prepare. And it’s ready in about 25 minutes.
Friday’s dinner is a quick and easy Thai dish made with ground beef, although you can swap that for any meat you prefer. Served over rice, it’s an easy takeout meal made at home.
Treat: Keeping with a “red” theme; we’re making Strawberry Cobbler in a skillet. Simple, delicious, and perfect for strawberry season.

This week we're cooking delicious healthy, comfort food dinners perfect for early summer, packed with flavor and ready in 30 minutes or less.
Monday: Summer Succotash
"When I think summer, I think succotash! This is a warm, slightly Southern take on my grandmother’s best vegetable dish. It includes all the vegetables she loved from the South." Consider adding Al Roker's Cornbread for a delicious Juneteenth-inspired meal.
Tuesday: Sheet-Pan Shrimp, Pineapple & Peppers with Rice
"This incredibly easy seafood dinner uses fresh pineapple and a teriyaki-style sauce a sweet-and-tangy flavor profile. The pineapple also concentrates as it bakes and helps keep the rice mixture from becoming too dry. Rather than spreading the rice to the far edges of the sheet pan, keep it closer to the center and layer the vegetables and shrimp on top. This way their juices seep right into the rice, and the teriyaki drizzle coats every bite."
Wednesday: Greek Chicken Skillet with Asparagus
Greek Chicken Skillet is a quick and easy seared chicken breast recipe that simmers in a delicious lemon sauce, ready in 30 minutes or less.
Thursday: Simple Grilled Salmon & Vegetables
"Grilled salmon and veggies make for a colorful and balanced seafood dinner that's ready in just minutes. The grill turns the salmon flaky and moist while tenderizing the crispy pepper and onion pieces. Round out the meal with brown rice or quinoa."
Friday: Thai Ginger Beef
A delicious alternative to stirfry, this Thai Ginger Beef is bursting with flavor, ready in 20 to 30 minutes, is incredibly easy… and Friday perfect.
Side: Al Roker's Skillet Cornbread
"Cornbread baked in a cast-iron skillet is a simple, rustic pleasure that can be adapted any way you like. It can be a little sweet, or a little bit savory. You can add cheese or bacon, or just enjoy it hot out of the oven slathered with butter and a dab of honey."
Treat: Skillet Strawberry Cobbler
This Strawberry Cobbler is a quick and easy recipe made with fresh strawberries, pantry ingredients, and is ready in about 35 minutes. Serve straight from the skillet with a scoop of melting vanilla ice cream.
