This is a side note, but every week as I write menus for the upcoming week, I number them. This week is #50. With 52 weeks in the year, I can hardly believe this year has flown by!
With two weeks left in 2022, I hope you’re making the most of the holidays, and this year.
Busy schedules seem to dominate this time of the year so this week’s aim is to keep dinners healthy and simple. Easy cleanup is a bonus! I’ll take one pan or skillet cleanup any day.
Here’s what we’ve planned for the dinner menu.
Healthy December Skillet Dinners Menu
Monday’s dinner is full of Italian flavor in a simple skillet dinner using Italian sausage and a slew of veggies. Serve over pasta or your favorite grain. And, as always, a seasonal green salad is great too!
For Tuesday, a simple skillet pork chop dinner is served with a delicious honey balsamic sauce and peaches. Using frozen peach slices makes this dinner super quick. Or swap out the peaches for apple or plum slices. Serve with greens and roasted potatoes.
The family is looking forward to Wednesday’s dinner! We’re making a quick and easy chicken pot pie that’s actually healthy. Using a store-bought crust, frozen veggies, and rotisserie chicken makes this dinner a breeze.
On Thursday, we making a simple but utterly delicious healthy Mediterranean skillet seafood dinner.
And we’ll round out the week with a easy, Friday-perfect skillet dinner made with ground beef (although you can swap it for ground turkey, chicken, or pork) and potatoes.
The treat is all about chocolate, the holidays, and 2 minutes in the microwave.
