For St. Patrick's Day, I'm skipping the heavier stews and sharing a dish inspired by a cozy Irish inn I once visited-Irish Baked Salmon. It's light, wholesome, and finished with a traditional dill cream sauce that feels celebratory without the hour-long simmer.

  • Monday: Sheet Pan Chicken with Sweet Potatoes
    Serve with a quick green salad or steamed broccoli for a simple start to the week.
  • Tuesday (St. Patrick's Day): Irish Baked Salmon
    Top with the dill cream sauce and serve with roasted potatoes or buttered cabbage for a light Irish-inspired supper.
  • Wednesday: Arroz con Pollo
    A comforting one-pot classic-perfect with a squeeze of lime and a simple avocado or tomato salad.
