I don’t know about you, but I’m prepping and planning all kinds of dishes for Thanksgiving this week and baking dozens of cookies for the Christmas holidays.
Dinners need to happen, and this week, they need to be quick!
Let’s dive in.
Tips for this week’s menu:
To make these meals 20 minutes (or even less) there are a couple of things to keep in mind. You will need pre-cooked meatballs (frozen cooked meatballs are fine) for Wednesday’s dinner.
To prep for Friday’s meal, have precooked chicken (like Rotisserie or previously cooked frozen chicken) as well as cooked quinoa. I like to prep my quinoa in the Instant Pot for 1 minute!
November 20 Minute Dinners: What’s on the Menu
On Monday, dinner is 15 minutes, healthy, and meatless. It’s a soup featuring white beans and garden type vegetables. I will be adding rotisserie chicken to my guys meals and reserving some for Friday’s dinner.
My mouth is watering in anticipation of Tuesday’s dinner. It’s hard to believe you can make something this yummy and flavorful in 20 minutes– but it can be done for this Asian-inspired takeout favorite.
Wednesday is a fall and winter classic at my house. An authentic Italian soup with deep roots and flavor. Add greens and crusty bread if you wish.
For Thursday’s seafood dinner we’re making a simple salmon dish with fall flavors of maple and ginger. It’s both sweet and savory at the same time. You may want to serve with a side of quinoa and reserve some for Friday’s dinner.
On Friday, we’re making a skillet dish with leftover chicken. It’s a favorite at my house (both for the eaters and the makers). It’s healthy, delicious, and super easy. Friday-perfect for sure!
And don’t forget the treat this week. It will serve you well during Thanksgiving.

Monday: 15 Minute White Bean Soup with Vegetables
Do you have 15 minutes for a warm and yummy White Bean Soup? For a warm and cozy meal on a blustery day? For me? Any day of the week! Plus... it's healthy too and packed with vegetables like onion, garlic, carrots, green beans, tomatoes and spinach.
Tuesday: 20 Minute Garlic Beef and Broccoli Lo Mein

Wednesday: Minestra Maritata (Italian Wedding Soup)
Italian Wedding Soup is easy to make and we've streamlined it even further so it fits neatly into a weeknight meal plan. Meatballs in Italian Wedding Soup tend to be on the small side which can be a challenge to pull together if you're in a hurry. Instead, we use larger meatballs in our soup to save on prep time. You can buy pre-cooked frozen meatballs to add to your soup or make a homemade batch ahead of time as we do here. We also use baby spinach which can be added right to the soup without removing stems or chopping.
Maple Glazed Wild King Salmon
