Paella Recipe That Make Weeknights Meals Simple

Paella, while it seems exotic, is really an easy weeknight dish you can whip up in 20 minutes or so. This is one of my favorite recipes for Paella with Chicken, Chorizo, and Shrimp.
Says the UK’s Independent, “Just fry up a bit of onion and garlic, add a few chunks of chorizo, chuck in some chicken, or prawns, or both, and some short-grain rice – Spanish if you’ve got it, or whatever else comes to hand. Then cover with stock and a bit of saffron (optional), and 20 minutes or so later, you’ve got a lovely paella.
Paella purists do claim Valencia’s famous regional dish has been usurped by something decidedly not authentic. They say that while ingredients may vary from region to region, no authentic paella contains chorizo.

Until then, I’m loving this easy Paella my family always enjoys and is a cinch to make any day of the week. And if chorizo isn’t a favorite, switch it out with something you do like! Although the sausage adds tremendous flavor, I’ve even made it without. And we love it just as much!
