Summer flavors, vegetables, and ingredients will dominate our weeknight table.
I love summer and all the fresh produce it brings. July has a host of new things to cook. Here are some ideas.
What to Cook in July
- Summer Berries: Blueberries, raspberries, strawberries and even some blackberries.
- Peaches: Some early varieties are beginning to show up in the market – use on salads, pizza, grilled, salsa, and of course, peach cobbler.
- Tomatoes: Sliced, tossed, pureed, sauteed… or roasted. There is no wrong way to use a tomato!
- Corn: Look for bright green husks and glossy silks. Toss in salads, Mexican favorites, pizza, chowders, or in pasta (as we are this week).

Have a great week everyone.

Quick and Healthy Summer Dinners: What to Cook (July 6-10)
Monday gets better with this easy pasta with corn, basil, and scallions, packed with summer healthy comfort food!
"This hearty supper salad is a lean-protein powerhouse thanks to chicken, chickpeas, and edamame; the parsley pesto delivers bone-boosting vitamin K. Pick up frozen shelled edamame to make this meal extra speedy."
"Ginger, fish sauce and honey combine to create a delicious basting sauce in this easy grilled salmon recipe. Look for Thai red chiles in the produce section of your grocery store, or use a green or red jalapeño instead. Not only is this salmon dish delicious, but it also takes just 25 minutes to prepare."
"This pesto chicken bake is easy to make as well as delicious! The chicken stays moist while the cheese on top gets bubbly and crispy. The pesto, mozzarella and tomato combination is a home run every time. Serve the chicken over pasta or your favorite grain."
"Creamy tzatziki and crisp sliced cucumber add a refreshing twist to this easy Greek-inspired burger recipe loaded with feta, spinach and Mediterranean spices. No tzatziki? No problem! Make your own at home by combining plain Greek yogurt with a squeeze of lemon, dill and finely chopped cucumber."
One of the easiest summer desserts. And worth every calorie. Besides, we've been healthy all week!
