Radish and Cucumber Tea Sandwiches
Serving an assortment of finger sandwiches is an easy and delicious way to host an afternoon tea. Cucumber tea sandwiches are often the first my tea guests reach for, regardless of the season.
With this twist on a classic cucumber sandwich, we are varying the flavor, texture, and shape with these open-faced radish and cucumber tea sandwiches. And I find them delightfully fresh and perfect for the season.

Ingredients for These Open-Faced Tea Sandwiches
You will find the measurements I use in the recipe card below, but here are the 4 ingredients you will need:
- Curry Butter: Unsalted whipped butter at room temperature (for a vegan option, look for a whipped non-dairy alternative), curry powder, and sea salt. If you wish to substitute curry powder, chaat masala, which has a distinctive warm aromatic flavor, is a delicious option.
- Persian cucumbers, sliced into thin rounds
- Red radishes, sliced into thin rounds
- Whole grain sandwich bread
How to Make Radish Cucumber Tea Sandwiches
These finger sandwiches are incredibly easy to make with only a handful of ingredients.
Step 1: Make the curry butter
Bring the whipped butter to room temperature and then mix in the curry powder to taste. Season with salt, I prefer sea salt, but kosher salt is great, too, and set aside.
Step 2: Thinly slice the radishes and cucumbers
A mandolin makes this task really quick. While I have a full-size mandolin, I keep this handheld mandolin in my drawer for quick slicing. For these sandwiches, it took about 1 minute.
You can also use a knife to quickly slice the cucumbers and radishes into thin slices, about 1/8th of an inch.
Step 3: Assemble the sandwiches
Spread about 1 tablespoon of curry butter onto a bread slice to the edges. Then, alternately layer overlapping slices of cucumbers and radishes on top of the butter. Using a serrated knife, trim the crusts and slice the open-faced sandwich in half diagonally.
Tea Pairing with Curry Tea Sandwiches
With the simple ingredients in this open-faced tea sandwich, I enjoy black tea, which usually pairs well with a variety of sweet and savory options. Darjeeling is especially nice with curry butter. For cucumber tea sandwiches, I love Jasmine green tea.

Radish and Cucumber Tea Sandwiches
Equipment
- Serrated Knife
Ingredients
- 3/4 cup unsalted whipped butter at room temperature
- 2 teaspoons curry powder
- kosher salt to taste
- 8 whole grain sandwich bread thinly sliced
- 2 Persian cucumbers (about 6 oz, sliced into thin rounds, about 1 cup)
- 6 radishes sliced into thin rounds (about 1 cup)
Instructions
- In a large bowl, combine the whipped butter and curry powder and stir until well combined. Season to taste with salt.
- Spread seasoned butter (about 1 tablespoon) onto a bread slice, spreading to. the edges. Repeat with all bread slices.
- Alternately, layer overlapping slices of cucumbers and radishes on top of the butter. And then repeat with the remaining slices.
- Use a serrated knife to trim the crusts and slice the open-faced sandwich in half diagonally. Transfer to a serving or 3-tier platter.
