I almost can’t believe we’ll be waving goodbye to April and welcoming May… in a week!
While time seemed to stand still over the last couple of years, it’s making up for it now.
The sun is warming, the days are growing longer. It’s not summer, but it’s not winter either. They say April showers will bring May flowers. I’m eagerly anticipating those blooms, and warmer weather too.
In this transition time, between seasons and in the heart of spring, meals tend to transition as well. Simple, delicious foods with bright, healthy ingredients and fresh taste are top of mind.
If those meals can be simple and easy to clean up, like one-pot dinners, all the better!
Here’s what we’re cooking this week:
Spring One Pot Dinners
Monday’s dinner is a vegetarian, meatless favorite, packed with flavor, healthy ingredients… and pasta! It’s springtime in a pot!
For Tuesday, we’re making a family favorite that is incredibly versatile. This taco skillet can become… tacos, of course, but they can also become wraps or even taco bowls served over your favorite grain. Add healthy condiments.
Lemon and springtime should always live together! Wednesday’s meal is a simple chicken skillet dinner, bright with lemon flavors and healthy with greens.
On Thursday, we’re making a Greek Roasted Fish dinner I’m looking forward to. Use your favorite white fish for this simple, delicious dinner.
Friday night’s dinner is a classic Asian takeout favorite we’re making at home. In the Instant Pot. Serve by itself or over your favorite grain.
And the treat? It’s one pot dessert– well, maybe a one-mug dessert that’s perfect for April.
