With temperatures soaring, we're looking forward to a week of no-cook dinners. Simple, healthy meals to keep the kitchen cool, and dinner... super easy.

Here's what we're planning this week.

Summer No-Cook Dinners

Monday is a healthy start to a new week with the easiest ever chopped Greek Salad, all no-cook, all healthy, and all delicious.

For Tuesday, dinner will take all of 5 minutes, and is a fun option for eating outdoors. In fact, make it super fun by packing a picnic in the shade.

On Wednesday we're making ham salad that can be served in buns, in lettuce cups, or over greens.

Thursday's dinner is a delicious shrimp salad with a zesty lime dressing that I'm already drooling over.

Friday's dinner is a quick and easy BBQ chicken sandwich. And no -- there is no cooking involved. It begins with a rotisserie chicken and ends with happy people.
